How to prepare Spiedies

Grilling on an open fire, wood, or charcoal was the traditional method of cooking Spiedies.  We still suggest grilling as the best way to prepare your Lupo’s Spiedies, whether you prefer gas or charcoal.

Preheat your grill!  You can cook Lupo’s Spiedies on skewers, in a grill basket/wok, or just toss them on the grates of your grill.  Turn Spiedies every few minutes, letting the outside get a nice bown, charred look.  When your Spiedies have reached an internal temperature of 165°f, they are done.  Pull them off of the grill and place on fresh Italian bread.  For a little extra flavor, top with Lupo’s Sub Sauce!

 

Pan Fry ’em

Preheat a pan on your stovetop.   Place your Lupo’s Spiedies in the pan individually, or on bamboo skewers, and cook until nice and brown in color.  Your Spiedies are done when they reach an internal temperature of 165°f.  Remove from pan, toss with a little Lupo’s Sub Sauce and enjoy with a slice of fresh Italian bread.  If you don’t want the traditional Spiedie sandwich, add some fresh peppers and onions for a Lupo’s Spiedie stir-fry!

Bake ’em

Bake, or broil your Lupo’s Spiedies.  Lay your Spiedies out on a baking sheet or other oven safe dish, put them into the oven at 350°, until they reach the internal temperature of 165°.  Add Lupo’s Sub Sauce if desired.  Be careful not to overcook them when preparing your Spiedies in the oven.

Our favorite recipes

Lupo’s Spiedie Kabobs

you will need:

1 pound of Lupo’s Spiedies, any variety

1 bell pepper

1 medium sized onion

cherry or grape tomatoes

bamboo or metal skewers

How to make it:

Soak your bamboo skewers in cold water while you prep your veggies.

Cut your veggies into 1″ cubes/squares

Skewer your ingredients, alternating vegetables and Lupo’s Spiedies until you run out of Spiedies.  Place on hot grill, or a pan if you’re using the stovetop, and cook until Spiedies have reached an internal temperature of 165°.  Brush with Lupo’s Sub Sauce for an extra bold flavor.  (makes about 6 kabobs)

 

Carol’s Chicken Spiedie Surprise (The original Mrs. lupo)

You will need:

large casserole dish

1 pound of Lupo’s chicken Spiedies

2 large potatoes cut into 1″ cubes

2 green peppers cut into 1″ cubes

How to make it:

Mix all of your ingredients in the baking dish, including the extra marinade in the bag.  Cover with lid or tin foil.  Bake in the oven at 350° for 1 hour, stirring halfway through.  Check your Spiedies to make sure they are at 165° internally before serving.

 

Spiedie omelets

You will need:

Leftover (cooked) Lupo’s Spiedies

3 eggs

Milk

shredded cheese, any type

chopped onions and peppers, or whatever you like in your omelets

Nonstick spray or butter, for pan

How to make it:

Chop your Lupo’s Spiedies into smaller pieces, almost like a crumble size.

Whisk 3 eggs and milk in a bowl until combined, pour into a hot frying pan coated with non-stick spray or butter.  Cook over medium heat until mixture is mostly cooked, then add your Spiedies and veggies to one half of the mixture, lightly cover with shredded cheese and fold the other half of the eggs over top of everything.  Cook for a few minutes longer, flip if you wish, to get that golden brown we all love, and sprinkle a bit more cheese on top.  Place a cover over your pan and turn the heat off to let the cheese melt.  Slide your Spiedie omelet onto a plate and enjoy!

 

Spiedie Alfredo

You will need:

1 pound of Lupo’s Chicken Spiedies

3 tablespoons butter

1 garlic clove, minced

1 cup heavy whipping cream

1/4 cup plus 2 tablespoons grated Parmesean cheese, divided

1/4 cup grated Romano cheese

1/8 teaspoon salt

Dash ground black pepper

Any type of cooked pasta

How to make it:

In a large saute pan, cook your Lupo’s Spiedies, remove them from the pan, leaving any drippings or browned bits.  Melt the butter over medium heat. Add the minced garlic and cook until it’s fragrant, about 1 minute. Then, slowly add the heavy cream, whisking constantly as you pour until all the cream is incorporated. Bring the mixture up to a gentle simmer and let it cook for 3 to 4 minutes, until it begins to thicken.  Remove the pan from the heat and begin adding your Parmesean cheese, whisking between each addition to make sure it is fully incorporated.  When all of your cheese has been blended in, return your pan to the stovetop and add your cooked Spiedies back into the pan.  Simmer your sauce gently for 3-4 minutes to allow it to thicken.  Season to taste and  serve over your pasta of choice

other ways to enjoy lupo’s spiedies

Lupo’s Spiedies can be added to any dish in place of chicken breast for a more flavorful experience.  We do the seasoning, so you don’t have to! You can put them in wraps, on top of fresh greens for a nice Spiedie salad; bread and deep fry them for Spiedie bombs; use them in casseroles, fajitas; as a pizza topping; in your mac and cheese and so much more!
